The beer that started it all. Caribbean Chocolate Cake is a dense, rich and luxurious stout – even more so this year with the smooth, thick drinking nitro edition. Hand-roasted cacao nibs give hints of tamarind and lemon, along with a beautiful chocolate baseline. The malts provide coffee and roast notes in abundance, while the hop profile adds orange and coconut flavours. Spinning on Cypress wood is the icing on the cake - offering lightly toasted vanilla wafers and delicate tannins, balancing the inherent sweetness of the beer. Pure canned indulgence.

Tropical Stout with Cacao, Maple Syrup and Cypress, Amburana & Maple Wood
Our most extravagant beer meets the most extravagant breakfast in this year’s Caribbean Chocolate Cake twist. We’ve adjusted the base here a little to allow the pancake element to come through. We’re layering maple notes from syrup to wood, maximising depth of flavour. A small amount of smoked malt, working in tandem with bourbon maple staves and the sweet, sticky undertone adds a delicate aroma akin to the impact you’d get from perfectly prepared streaky bacon. A generous helping of cacao and a dusting of spices, in part from the expressive Amburana wood, completes this liquid guilty pleasure.

Death by Chocolate Cake. What would happen if we took one of the nation’s best loved, super-indulgent desserts for inspiration, and applied it to our most indulgent beer? Even more cacao nibs, even more cacao husks, even more lactose, even more wood. It’s doubled down and ramped up to imperial strength. We’ve increased the ABV slightly this year and welcome back Amburana wood. These spicy, fragrant spirals impart all kinds of flavours, not dissimilar to the complexity of tonka beans, making the beer a truly unique experience.

Bourbon Barrel Aged Tropical Stout with Cacao & Cypress Wood
It just wouldn’t be a complete collecFon without uFlising the skills of barrel manager Steve, and of course, some of the finest oak barrels in our cellar. The art of ageing in wood vs spinning on wood comes with subtle differences that we just love exploring. We brewed a base beer in 2019 that was spun for 72 hours on cacao and Cypress prior to filling a mixture of Buffalo Trace bourbon and rye barrels. This is a long process, and we were keen to begin layering flavour from the early stages. A[er picking up spice, caramel and spirit notes from the barrels, along with oak tannins, we then spin again for 72 hours on the adjuncts. This pre-release addiFon gave us a fresh vibrancy of flavour and aroma to a beauFfully matured beer.
