The grapes are harvested early in the morning to arrive fresh for slow fermentation with native yeasts. Once pressed, the wine undergoes malolactic fermentation in French oak barrels. After 6 months of lees contact, the wine is racked and soft fining is carried out prior to bottling
 A clear, deep red with flashes of garnet. Ripe black fruits on the nose with notes of coffee, sweet tomato and thyme. Good structure defined by round tannins and nice acidity. Balanced and juicy, with a touch of spice and a silky finish

 Ideal with stews and fattier roast meats such as lamb and pork. Also works very well with smoked foods
