Full-bodied and aromatic, it's often compared to Sauvignon Blanc. 
Expect bright and fresh acidity with prevailing lemon, green apple, kiwi, and pear, with notes of fennel, mushroom, and a hint of grass. Serve this dry wine chilled. Spanish Verdejo pairs really well with poached proteins and shellfish. The acidity cuts through and compliments asparagus, tomatoes, olives, and greens with vinaigrette dressing. The wine is best enjoyed young, no longer than 3-4 years after bottling.
