 Situated in the eastern part of Montalcino, the San Polo estate comprises 22 hectares, of which 16 are planted under vine. They produce classic wines with a bit more weight than those made in the north of Montalcino. The winery has been certified sustainable by the respected Casa Clima organisation since 2013. It has also been certified organic since 2017 and vegan-certified since 2019.
Grapes are harvested by hand in small 17 kg crates during the second half of September. Sangiovese, Montalcino’s most important grape variety, is fermented and aged exclusively in stainless steel tanks, giving life to a wine with great freshness and versatility.
 
Deep ruby red in colour, Rubio is modern and elegant and conveys the lively fragrances and colours of an untouched natural environment.
